The Prairie Star varietal began in Wisconsin and has been a part of the Acquaviva Vineyard since 2005. Many Illinois vineyards have been slow to embrace this grape, but since we adopted her, she has shown real potential. Our first bottling was in 2011, and in the years that followed, Acquaviva won several important awards with Prairie Star, both nationally and internationally. Currently, farms in Illinois are beginning to plant this varietal, and we are excited to see her growth!

This Wine's Characteristics
At Acquaviva, we hand harvest all of our grapes and harvest dates are determined by tasting the grapes. For Prairie Star, harvest is typically somewhere in the second week of September. This grape is fermented in cold temperatures in our stainless steel tanks. The fermentation process produces a semi-dry, floral, exotic wine. With a full mouth and great complexity, you can find hints of peaches, spices, grapefruit and some grassy flavors in this wine as well. This particular vintage offers a bit more citrus than previous years, and although the sugar levels haven’t changed, the natural parameters of the fruit have allowed for that added crispness to show through. This balanced, crisp wine is pure Prairie Star.
